Instant Pot Beef Stew
Simple and effective!
500g of lean diced beef
5 medium sized potatoes (cut into large chunks or they’ll disappear!!! each medium potato = 6 chunks)
1 large carrot and any other root vegetables sliced/cubed.
Salt, pepper and any herbs/spices you may fancy (in a stew context obviously, i.e. thyme, rosemary, bay leaf – I put a bit of chilli powder for a bit of a kick)
a little red wine to deglaze (optional)
200ml beef stock
Saute the onion and garlic
Seal the beef
Deglaze with the red wine or the stock
Pour all the stock in and remaining ingredients.
Cook on Manual High pressure for 25mins and QPR.
The meat will be tender and melt in the mouth! As if it’s been slow cooked for a long time.
